5 apples
1 t lemon juice
1 t grated lemon rind
1/4 t salt
1 t cinnamon
1/2 c sugar
Wash, pare, core & slice apples into a bowl. Add lemon juice, rind, cinnamon, sugar. Blend until well-coated. Put into a 6 cup shallow baking dish, buttered. Cover with crumb topping.

Fried Apple Rings

2 tart apples
4 T butter
2 T sugar
Core the apples. Peel them only if the skins are tough. Cut them in 1/2 in slices and saute the slices in butter until just barely tender. Sprinkle with sugar, cover the pan, and cook a few minutes more, until they are golden and brown.
